Mom's Zucchini Corn Air Fryer Fritters

When my Mom shared a pic of her corn zucchini fritters with me, I knew I had to get my hands on that recipe. It was quickly and easily veganized and it’s a total winner! These fritters could easily be adapted with any spice preferences including adding some red pepper flakes and cumin but I hope you have fun because the little bit of elbow grease it takes to sweat the veggies is totally worth the end result, not to mention these are free of oils and fairly low calorie if that’s what you’re looking for!

Ingredients

2 zucchini grated or shredded

1 onion grated or shredded

2 teas of salt

1 shredded or grated potato

1.5 cups gluten free breadcrumbs

¼ cup grated Violife parm

1 cup corn

1 tsp Garlic & The Glory Spice Beast Blend OR (1/2 tsp garlic powder, ¼ tsp paprika, 1 tsp parsley, 1 tsp basil)

1 egg replacer or flax egg

Add the shredded zucchini and onion to a bowl and sprinkle with the salt, mix and let sit for 15min to leach the water out of the vegetables. Using a thin kitchen towel or cheesecloth scoop the veggie mixture into the towel and wring out all the water over the sink until the contents of the towel are as dry as possible. This takes a bit of elbow grease but it’s worth it!

Once the veggies are squeezed dry dump them back into the bowl and add shredded potato, breadcrumbs, cheese, corn and seasonings. You likely won’t need salt because of the salt used to sweat the veggies. Mix well and then add the egg replacer or flax egg.

Once the mixture is well blended use your hands to form small patties no more than ¾” thick. If the mixture is too wet you can sprinkle a bit more breadcrumbs to make it easier to work with. Place the patties directly into your air fryer and cook at 375 for 15-20 min or until golden brown.

Serve warm with your favorite dipping sauce!
