Quick & Easy Yellow Dal

There is nothing more satisfying than a creamy warm bowl of rice and dal on a chilly winter night. I’ve added garlic to this which creates a bit more warming quality in addition to the ginger. It can easily be omitted in favor of a less potent dish.

Ingredients

1 cup red lentils

2.5 cups water

1 tsp ground turmeric

2 tsp ground coriander

1.5 tsp fresh grated ginger

1 tsp fresh grated garlic

1.5tsp salt

1 tsp cumin seeds

2 Tbl refined coconut oil

Chopped cilantro and onion for garnish

Add lentils, water, turmeric, coriander, ginger and garlic to a saucepan and bring to a boil and then simmer until lentils are soft. If the lentils absorb most of the water before becoming soft simply add more water 1/4 cup at a time until the lentils are creamy. Add salt and stir.

Once the lentils are cooked, In a second saucepan heat the oil and toast the cumin seeds until fragrant, lower heat and Add the lentils to the hot oil be careful this will sputter and may spray a bit! Bring back to a simmer for a few minutes stirring.

Serve over your choice of rice or quinoa and garnish with minced onion and cilantro.
