Vegan Mounds Bars

There is nothing like making your own candy bars and these vegan mounds bars are super simple, you can even add almonds and make them into Almond Joy!

Makes approx 12 bars

Ingredients

1 1/2 cups shredded unsweetened coconut

3 Tbl maple syrup

2 Tbl coconut cream or full fat coconut milk

1 tsp coconut extract

1/4 cup brown rice syrup

8 oz melted dark chocolate + 1 Tsp coconut oil

Prepare a baking sheet with parchment paper. In a food processor blend coconut, maple syrup, coconut cream, extract and slowly add brown rice syrup until the mixture begins to form a dough like ball. Use a cookie scoop or a tablespoon to scoop mixture then form it into log shapes by hand and place them on the parchment. Freeze 4 hours or overnight.

Melt chocolate and coconut oil. Use two forks to dunk and coat each bar and place back on parchment. Drizzle leftover chocolate across the bars once they have set for a decorative drizzle.

Refrigerate up to 12 days, if they last that long!
