Scallion & Garlic Noodles

A riff on some other recipes I’ve seen for savoy noodles. The garlic and scallions infuse the oil and coat the noodles in a delightful sauce that will make you want to eat the whole bowl!

Ingredients

8 Scallions sliced thin

3 ounces of neutral oil

2 carrots shaved

2 large cloves of garlic, minced

3 small baby, bok choy, chopped

2 tablespoons soy sauce

2 tablespoons coconut liquid amino’s

Large handful maitake mushrooms

Rice noodles or any thin spaghetti like noodle

Heat oil and fry scallions and garlic 5-10 min until browned and carmelized. Add mushrooms and toss until browned and crispy, add carrots and bok choy and toss take off heat and add soy and liquid aminos and stir, toss with noodles and top with chopped fresh scallions and red pepper flakes
