Banana Chocolate Chip Gluten Free Muffins

Simple, quick and just enough sweetness, these muffins are great with morning tea, as an afternoon snack or late night indulgence.

Ingredients

1 3/4 cups gluten free all purpose flour (I use Bob’s Red Mill)

2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

3 ripe bananas mashed

1/2 cup unsweetened applesauce

1 tsp vanilla

1/4 cup organic cane sugar

1/4 cup mini vegan chocolate chips (I use Enjoy Life brand)

Preheat oven to 350 and prepare muffin tin with parchment muffin liners. Makes approx 10 muffins

In a medium bowl, mash bananas and mix in all other wet ingredients. In a separate bowl mix dry ingredients except chocolate chips. Add dry ingredients to wet mixture and stir until combined. Add the chocolate chips and mix well. Scoop into muffin liners and fill 3/4 full. These do not rise much so you can overfill them without any concern.

Bake 20-25min until a toothpick inserted comes out clean. Remove from tin and let cool completely. Store in an airtight container for up to 3 days or freeze.
