Crispy Sourdough Battered Air Fried Tofu

Have you ever frozen and thawed tofu? It completely changes the texture and composition and for SOME people it can make the difference between tolerating tofu and LOVING it (besides flavor of course!) This recipe was inspired by my recent adventures in sourdough bread baking and the process of maintaining a sourdough starter means regular feedings which then yield what is referred to as ‘sourdough discard’ and if you know me I have a hard time throwing food away so I’ve been having just as much fun finding creative ways to utilize sourdough discard ! If you’re not into sourdough you could easily replace the sourdough discard with a simple beer batter.

Ingredients

1tsp Spice Beast Power Mex Seasoning (or 1/2 tsp chili powder, 1/4 tsp oregano, 1/4 tsp dried basil)
1tsp Spice Beast Chickeny Goodness (or 1/4 tsp brown sugar, 1/4 smoked paprika, 1/4 tsp cumin, 1/4 cayenne powder)
1/2 tsp garlic powder
1/2 tsp onion powder
1tsp salt and pepper to taste
3/4 cup sourdough discard

Crunch Coating
1/3 cup gluten free Panko breadcrumbs
2tbl vegetable oil

Freeze tofu overnight or longer. Thaw frozen tofu and rip into pieces. Mix the batter and spices fold in the tofu until completely coated. Sprinkle Panko and mix thoroughly and then drizzle with oil and give it a final mix before putting the mixture into the air fryer. Air fry on the French fry setting for 10 min and then give it a good toss to break up any batter chunks that have stuck together and air fry another 10 min. Give it another toss/stir and fry an additional 5-6min or until the nuggets are crispy!
