Sweet and Savory Roasted Potatoes

Tender new potatoes, sweet carmelized dates and whole cloves of spreadable garlic are a divine combination in this easy dish that can be prepared in advance and easily reheated and enjoyed as leftovers!

Ingredients

1.5 lbs mini heirloom potatoes or any baby potato variety sliced in half with skins

1 head of garlic (cloves peeled and sliced in half or used whole

10-12 large medjool style dates sliced in half horizontally not vertically

Olive Oil, salt and pepper to coat

parsley chopped for garnish

Preheat oven to 450 and prepare a large baking pan with parchment.

In a large mixing bowl toss chopped potatoes, dates and garlic cloves with enough olive oil to generously coat ( you want everything to look shiny and well coated!) Sprinkle with salt and pepper to taste and spread the mixture in a single layer onto the prepared baking pan.

Roast for 20 min, toss and roast an adidtional 10-15 min until potatoes are cooked through. Sprinkle with fresh chopped parsley and serve!
