As a kid I was obsessed with marshmallow fluff. My grandparents always had a jar in their pantry corner cupboard. As a 20yr vegan I went without marshmallows for more than a decade before a few vegan marshmallow companies arrived on the scene! Who doesn't love an old childhood favorite, quick, easy, no-bake dessert!
1 bag Dandies Vegan Marshmallows
1 Box Rice Crispies (I used Organic Sprouted Brown Rice Crisps by One Degree Organic Foods)
1/4 cupcreamy organic unsweetened peanut butter
1 cup vegan chocolate chips (I used Enjoy Life Semisweet mini chocolate chips)
Melt the marshmallows in a non stick pan over low heat, stir constantly. They will not become super runny but will likely just melt down into a soft blob. Turn off the heat and mix in the peanut butter. Add the mixture to the cereal and mix until evenly coated. Pour and press the mixture with the back of a wooden spoon to compress. Melt the chocolate over low heat and spread evenly onto the rice crispy treats. Refrigerate to set approx 20 min. Cut into squares approx 16 and store in an airtight container.....if they last that long!
