Vegetable Chick Pea Slow Cooker Curry

Finally dug my slow cooker out of storage and concocted this little gem the first night! Don't know what took me so long. It's going to become workhorse for my little family throughout this Fall and Winter. Can't wait to share more slow cooker recipes with you. This dish is a warming comforting stew type meal that works great as a stand alone or over rice.

veggie chick pea curry


2 Carrots chopped

1 sweet onion chopped

2 cans chick peas drained and rinsed

3 red potatoes with skin, chopped,

1/2 cup frozen peas

1 red pepper chopped

3 cloves garlic minced

1 can pureed pumpkin

1 1/2 cups vegetable broth

2 Tbl curry powder (my favorite curry blends have cinnamon, cardamom and cloves)

1/2 tsp salt

1/2 tsp fresh ground pepper

Add all ingredients into the slow cooker and stir thoroughly. Set on low temp and let it cook for 6 hrs.
