On The Go Snack Balls

These delightful snacks are perfect fix for the on the go hiking snack, kids lunchbox or late night sweet tooth affliction. Since they are protein rich, you won’t need more than a few to satisfy! Basically anytime you’re looking for a naturally sweet and healthy bite! TWO simple recipes for Chocolate Cherry or Peanut Butter!

Chocolate Cherry Snack Balls

12 pitted medjool Dates

1/2 cup unsweetened shredded coconut

4 heaping Tablespoons cacao powder

1/2 cup almond butter

1/2 cup Quick oats (I use Quaker Instant Oats)

1/4 tsp salt

1/4 cup dried unsweetened cherries

1 tsp vanilla

2 Tbl hemp hearts

2 Tbl agave (optional or you can replace with maple syrup or opt out of both for a less sweet treat)

In a food processor, pulse the dates and coconut until dates are broken up, add cacao, salt, hemp hearts, quick oats and pulse until combined. Add almond butter, vanilla, cherries and blend until well combined, add agave if you’re using it and let the machine run until the mixture begins to ball up OR open it up and check to see if the mixture is sticky enough to form a ball from. Simply scoop 1 Tbl of the mixture into your hands and roll into balls. Store in airtight container for up to 10 days. May last longer in refrigerator but we like them room temp!


Peanut Butter Snack Balls

1 cup quick oats (instant oats)

8 pitted medjool dates

1/2 cup unsweetened peanut butter

1/4 tsp salt

1/4 cup roasted salted sunflower seeds

2 Tbl hemp hearts

1/2 cup unsweetened shredded coconut

2 Tbl almond butter

1 tsp vanilla

In a food processor pulse dates, coconut, sunflower seeds, hemp hearts, salt until combined. Add nut butters and vanilla and let them combine until the mixture begins to form a ball OR you test the mixture by hand to see if it sticks enough to roll balls from. Roll balls by hand with approx 1Tbl of mixture and store in airtight container for up to 10 days.
