Date, Fig & Coconut Snack Balls

Incredibly sweet and so easy to make, these snack balls are perfect for an on the go ‘pick me up’ or a late night snack. They come together quickly in a food processor and can be adapted with other dried fruits like apricots, raisins, cranberries or cherries too!

Ingredients

25 pitted Medjool dates

12 dried figs stems removed

1/2 cup shredded unsweetened coconut

1 Tbl date syrup *optional (these are sweet enough without it!)

1 Tbl brown rice syrup

Place 1/4 cup of the coconut into a small bowl and set aside.

In a food processor pulse dates figs and 1/4 cup coconut until finely chopped. Drizzle date and brown rice syrups and process until the mixture binds and begins to form a ball.

Using a tablespoon or small dough scoop and roll dough into balls and then roll into the coconut you set aside earlier. Store balls in an airtight container for up to 2 weeks but they last barely a week in our household of two!
